Over the best banana bread ever!
- 3 medium bananas, mashed
- 2/3 cup coconut sugar
- 2 eggs
- 2 tsp vanilla
- 1/4 cup plain greek yogurt or kiefer
- 1/4 cup coconut oil or butter, melted
- 1 cup almond flour
- 1/4 cup coconut flour
- 1 tsp baking soda
- 1tsp baking powder
- 1/2 tsp cinnamon
- Pinch nutmeg
- Pinch of ginger
- 1/2 tsp salt
- 1/2 cup coarsely chopped walnuts
Preheat oven to 350° F. Grease a 9 x 5" loaf pan.
In the bowl of a stand mixer, combine mashed bananas, sugar, eggs, vanilla, kiefer, and oil.
Beat on medium speed until combined.
Sift in flour, baking soda, cinnamon, nutmeg, and salt. Mix on low until just combined. Gently stir in walnuts.
Pour batter into pan. Bake 30-35 minutes or until a toothpick inserted in the center comes out clean. Let cool in pan for about 10 minutes.
Enjoy a delicious slice (or two)!
Note: whole wheat flour can be substituted for both almond and coconut flour :)
